Our production is versatile and artisanal – inspired by local culture and tradition, where all the milk comes from the cows on the farm. We make cheese from unpasteurized milk, i.e. raw milk that is not heat-treated before we start the cheesemaking process. This way we preserve the good qualities in the milk, which are important for the development of taste and aroma in the final product. This makes the cheesemaking process more robust and interesting, and makes the product stand out from industrial production.

All our white cheeses are putty-ripened, meaning they are washed with salt water during storage. The flavor develops over several months in storage. The most famous are: Mountain Queen, a semi-firm cheese matured for at least 4 months, and Bufast, a hard cheese (alpine type) stored for at least 1 year. We cook with whey Huldre cheese, an unusual brown cheese, flavored with the mountain herbs juniper berries and angelica, as well as Norwegian aquavit. We also produce Cottage cheese, sour cream and butter, in addition to other traditional products such as Old man and PrimPultost is a Norwegian type of cheese with long traditions in Gudbrandsdalen and the Inland region.

Avdemsbue is a general store with a history dating back to 1878, with continuous operation since then. In the summer of 2015, the store reopened as a local food store owned by Avdem Gardsysteri AS. Here you will find a large selection of Norwegian artisan cheese, beer from Norwegian microbreweries, Norwegian cured meats, spices, coffee and tea – and much more! Avdemsbue also offers simple serving of coffee, ice cream and cream waffles.

In the summer of 2019, a cheese-shaped extension designed by RAM Architecture opened. Here there is a café with good lunch and simple dinner dishes, toilets and storage space. An online store with self-service and 24-hour pick-up is also planned.
